Savoury Turmeric Pancake with Fromage Blanc and Roasted Veggies

1 x Egg
4 x Tbsp Buckwheat Flour
1/4 Cup Water
1 tsp Turmeric Paste {or finely grated fresh turmeric}
1 cup of left over roasted veggies {this can be seriously anything}
2 x tbsp. Fromage Blanc
1 tbsp Sweet chilli Sauce
Rocket
Kraut
EVOO

Mix all of the ingredients together in a mixing bowl ensuring that there are no flour lumps left over. Once everything is mixed you should have something that resembles a pancake batter.
Place a fry-pan (I use a crepe pan) on the stove over a medium heat and splash in some EVOO or coconut oil, you’ll probably need about a teaspoon. Once the oil is hot, pour the contents of the mixing bowl (your pancake batter) in to the pan. It should spread out a bit so that size wise, it’s similar to a medium sized plate. Let it cook on one side for a few minutes and once it looks brownish on the underside (use an egg flip to lift a bit and have a little looksie, the pancake shouldn’t really have any runny bits on the top part either) – flip it and cook the other side. When your pancake is cooked transfer it to a plate.
This is where the fun can really begin. There are no rules with pancake toppings – well I like to think there aren’t. So do whatever tickles your fancy. Start with a base of Fromage Blanc and Sweet chilli sauce – then top with roasted veggies, kraut and rocket. Wrap then roll and eat! This usually ends with me getting a mixture of sweet chilli and kraut sauce all over my arm and work clothes so I’d suggest using a paper towel or something so that you don’t end up like the little grublet that I am.
