Spiced Camel Meat Koftas with Yoghurt & Mint Sauce

Ingredients

For the koftas:

  • 500g camel mince
  • 1 small onion, finely grated
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • ½ tsp allspice
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Small bunch of parsley, finely chopped
  • 2 tbsp breadcrumbs (optional, helps bind)

For the yoghurt & mint sauce:

  • 200g Greek yoghurt (or camel milk yoghurt if available)
  • 1 tbsp tahini
  • Juice of ½ lemon
  • Small bunch of mint leaves, finely chopped
  • Salt to taste

To serve:

  • Warm flatbreads or pita
  • Tabbouleh or simple green salad
  • Pickled vegetables (optional)

Method

  1. Prepare the kofta mix
  2. In a large bowl, combine camel mince, onion, garlic, spices, parsley, and breadcrumbs (if using).
  3. Mix well with your hands until evenly combined. Cover and refrigerate for 30 minutes to allow the flavours to develop.
  4. Shape the koftas
  5. With damp hands, shape the mixture into sausage-shaped logs (around 8–10).
  6. Thread onto skewers if desired.
  7. Cook the koftas
  8. Heat a grill pan, BBQ, or frying pan over medium-high heat.
  9. Brush lightly with olive oil and cook the koftas for 8–10 minutes, turning occasionally, until browned and cooked through.
  10. Make the yoghurt & mint sauce
  11. In a small bowl, whisk together yoghurt, tahini, lemon juice, mint, and salt. Adjust seasoning to taste.
  12. Serve
  13. Arrange koftas on a platter with flatbreads, salad, and the yoghurt–mint sauce.
  14. Garnish with extra parsley or mint leaves.
