New York Buffalo Chicken Loaded Salad

If you're looking for a super easy healthy recipe to toss together this Summer then this recipe is for you. With spicy succulent chicken cooled off by avocado and creamy Camel Milk Marinated Cheese Persian Feta Style.

Serves 4 | Prep time 15 mins | Cook time 10 mins 
Ingredients
• 800g organic chicken thigh, sliced 2cm strips
• 1x lettuce
• 1x Mount Tamborine avocado, diced into 2 cm chunks
• 1x Punnet cherry tomatoes, halved
• 1x Punnet baby cucumbers, sliced
• 1/4 Red onion, thinly sliced 
• 1/2 Jar @summerlandcamels marinated persian feta
• 60g Butter 1cm cubes, chilled
• 60mls Gourmet Food Co Pizzaz Hot Sauce*
* Chef Dylan's Limited Edition Fermented Chilli Hot Sauce range
Method
1. Pull leaves off lettuce and arrange onto a large plate.
2. Sprinkle half the avocado, cherry tomatoes and cucumber on top of lettuce.
3. Heat hot sauce in a large heatproof bowl in the microwave for 2 mins.
4. Whisk 3/4 of butter into hot sauce until melted. Add the other 1/4 and whisk until melted. Set aside. 
5. Heat a large fry pan on medium heat and cook the chicken for 3 mins, then turn and cook for another 2 mins or until cooked.
6. With some scissors cut the strips into bite sized pieces. 
7. Add chicken to sauce and coat.
8. Place the chicken pieces evenly on the salad and drizzle with the remaining sauce.
9. Add remaining avocado, cucumber, tomatoes and red onion.
10. Garnish with Summer Land Camels Camel Milk Feta and devour.
