Tequeños are sticks of white cheese wrapped with a crunchy and slightly sweet dough and fried to golden perfection. In Venezuela they say “A party without Tequeños is NOT a party”.
Ingredients
500g plain flour
1 tsp baking powder
½ cup water
½ cup milk
½ cup oil
1/2 tsp sugar
pinch of salt
2 packets Summer Land Camels Haloumi 180g each
1 ½ cup vegetable oil for frying
NOTE: I made 12 cheese sticks
Method
1-Cut the Camel Milk Haloumi into pieces 1,5 x 6cm and reserve in the fridge.
2- Place the flour, salt and baking power into a bowl of stand mixer with the hood attachment. Mix to combine, about 1 min.
3- Add water, oil, milk and sugar and Knead the dough for 5 minutes or until dough is smooth.
4- Place dough in a lightly floured surface, knead with your hands until the dough is smooth and elastic about 2- 3 minutes.
5- Roll out into rectangle shape 22×22 cm and 4 ml thick.
6-Using a knife cut the dough into 2cm x 22cm strips lengthwise.
7- Take one strip of dough and cover the cheese from the top to the end. Continue to wrap dough around the cheese in a spiral fashion, overlapping the edges.
8-Heat oil over medium heat and fry the Tequeños, turning them all sides are golden brown. 9-Remove Tequeños to a plate lined with paper towels. Let cool for 1 minutes and serve immediately with the sauce of your preference.
