Roasted Qld Beets w Rocket, Walnuts and Camel Milk Feta
Thanks to the amazing Caz from Scenic Rim Cooking Classes for sharing this recipe with us! She recently featured our camel products, along with 14 other Scenic Rim producers, for a bespoke cooking class at Mt French Lodge.
This dish is full of fresh flavours, combining earthy roasted beets, crunchy walnuts, and peppery rocket, all tied together with the creamy, unique taste of our camel milk feta. Perfect for a nourishing meal or side dish!

Camel Milk Marinated Persian Feta
Ingredients
Method
- Preheat the oven to 200℃ (180℃ fan forced).
- Clean beetroot, and if large cut into half otherwise if small leave them whole. Line a baking tray with baking paper. Place the beetroots into the tray and splash over some olive oil, sprinkle of cumin seeds, sprig of rosemary and thyme. Good sprinkle of course salt over the top and cover with foil.
- Roast for 45 minutes to 1 hour or until soft enough to poke a skewer through.
- While your beets are roasting, combine the dressing ingredients in a small jar with a lid and shake well to combine. Set aside.
- In the last 10mins of beet roasting, put walnuts onto a lined baking tray and pour over maple syrup. Time them for 5 minutes and keep checking till golden.
- Take the foil off baking tray and let cool completely.
- Peel the skin away and cut the beets into large bite-sized pieces.
- Place the rocket into a serving bowl and drizzle over half the dressing. Toss to coat. Check the flavour and add a little more if desired, saving some to drizzle over the beetroot.
- Add the beetroot over the top of the rocket, and drizzle a little more dressing over.
- Crumble over the feta in large pieces, along with walnuts and the pomegranate seeds if using. Give it a good grind of black peppercorns.
Notes
Do not dress salad until the last moment.
Add the beetroot leaves too, if they are lovely and fresh.
